Baked Veggie Bites/Tasty Thursday

Tasty Thursday


 Tuesday, we tried the recipe above, Veggie Bites.
Zucchini fresh from the garden was our vegetable choice.
Love breaded zucchini. 
Love pretty much anything breaded.

Assembly line for the young chef.

Not quite sure how these were supposed to be edible. 
I even sprayed some extra butter on them, turned them once again, (actually 4 times) and still they were gritty and mushy. 
Breading was non existent.
Definitely not a keeper. 
We had Doritos instead for snack.

Thank You Tax Dollars/Tasty Thursday

Tasty Thursday
The year is 2008 and the Spanish class is doing a "Hands-on" cooking activity. Memorized from that class moment, she replicated a delicious meal for her father and I. I can't remember what I had for breakfast yesterday and my eldest made this for us for supper on Sunday evening and has not made it since that Spring of her freshman year. She's now entering Grad School. Proof that cooking with your kids is a memorable experience. I highly encourage you to Brave those dirty dishes and mess potential.
Now that I'm off my soap box, here's the event in pictures.
I present:
Chorizo Con Huevos y Nopalitos (Eggs with Chorizo and Cactus)

And no I couldn't stand idly by and let her do All the cookin.
My lil contribution from the garden......
Sauteed zucchini w/minced garlic in butter and olive oil.

Warming some corn tortillas. No butter or oil.
And don't forget the hot sauce. (not being paid to promote this brand. Pick whatever you like)
Ta Da!! Topped with some shredded cheese is how I completed my plate. You could add some sour cream or guacamole if desired. 
As for those tax dollars, well I'm pretty happy how things panned out. Pardon the pun.

Philly in Missouri

Tasty Thursday

The summer goodness of my garden is getting in full swing in the last week with fresh zucchini, cucumbers, Japanese eggplants, beets, green beans, green peppers, and tomatoes. All before July 4th!! This is a record year for sure. Peas were just the beginning.

But we enjoyed something a little different last Thursday and I'm sharing a couple pictures here.

With a recent trip to Columbia, Missouri, Ron and Rachel returned with a delicious sandwich alternative for the gluten intolerant in our household. These little baguettes were enough for the 3 of us to have some homemade Philly Cheese Steak sandwiches. Udi's did a remarkable job with this bread version. You could not tell the gluten was eliminated in its flavor or texture. I highly recommend these! (not paid to endorse)
Now.... to do some experimenting with sandwich fillings :)

Save Room For Dessert/ Tasty Thursday

Strawberries, I'd pick you above all fruits!
They don't really need sugar, fluffy white cool whip, yogurt, ice cream or chocolate.
But why not indulge on a lazy, warm, summer Sunday afternoon?
So we did.
I present a so-o-o-o simple recipe for gluten free shortcake. 
There is a reason they made bowl mixers with covers. I would recommend using yours
.............. or borrow your mother's.
Really.
Do you know how powdery corn starch can be?
Even more than powdered sugar.
So you've been warned.





 We used paper baking cups instead of the grease-your-pan method.
There were a dozen.
Someone couldn't wait. And of course, there always needs to be a taster :)
Guess they pass the taste test.
I split them in half for more cake per bite.
Here are those glorious strawberries all decked out!

Crisis Averted/Tasty Thursday

We found these in the freezer section Tuesday night. I had a feeling that my menu plan for Thursday was about to change. And I was correct.

 I would like to ask Udi's to do some forethought on the readability of this panel of information. I can see that UPC code really well, hint hint. One part I will decipher for you; 135mg Cholesterol. Ug! 
It figures. So I didn't eat the half bag serving. Saved myself from a little guilt.

This is the part where there could have been a major crisis. I have to admit I was in a hurry and tried using my superhuman strength. To a fault.
The eldest daughter was casually observing and decided to hand me some shears. I think she was more worried that the contents would end up for the dog and we'd have to have soup....or hot dogs.
 But all's well that ends well and we enjoyed this new offering from the Udi's gluten free line of convenient frozen foods. I have not been paid to endorse this product. I'm just sharing a little bit of Stephanie's Stuff on this return to Tasty Thursday

Ron's Chicken and Potatoes/ Tasty Thursday

There are so many good dinner ideas out there and my husband found us one this week. It was a good thing he felt ambitious because I've been drowning in prepping for the annual A to Z April Blog Challenge over at my other blog. Maybe next month you'll have a look-see. There'll be 26 opportunities to view something from A to Z.
Back to the dinner....
Rachel rolled up the bacon .


I Highly recommend a splatter screen for the chicken and bacon frying portion. Flavor will be an awesome combination though, I promise!

A couple before and after of the new potatoes cut in half. Added in onion and
some of these little numbers, seeded and sliced.

The end result, Ron gets best husband award for this delish meal.

Bless You and Yours/ Tasty Thursday

Cabbage
As this St. Patrick's Day approached, I spent some time cookin' up some traditional foods. Not necessarily because we are big celebrators of this holiday, but because we actually like them, grew up with them and hadn't had them for awhile.

Cut up and seasoned and ready to cook soaking up that chicken broth in our pressure cooker.

Chili Cheese Brats, (YuM)
Cabbage and Potatoes
Potato Soup
Tasty Thursday this year falls on St. Patrick's Day giving me a chance to bestow a little blessing on each of my readers.....

Lunch In Our PJ's / Tasty Thursday



There's a new pancake batter on the block.
It's in the gluten free variety.

In a nutshell, we were treated to breakfast for lunch.
Funfetti pancake batter was in the cabinet calling our names. 
Rachel was cookin these little lovelies for us.

Depending on the weather, g-free can be a bit fickle.
So I took the Meat option and fried up the sausages.
Rachel learned one secret about pancakes from this team effort.
You always start with a very hot skillet for the first batch.
They'll never have to be given to the dog.
Even though we only have a cat, she'd probably eat them....they were delish!

Aroma / Tasty Thursday

 I wanted to use Aroma Tools on my blog title, but I guess that's a Company that specializes in aroma therapy items. Who knew? I certainly didn't, but glad I googled it. Good ol' Google.
But since I've already committed to the Aroma title on this Tasty Thursday,
the spices above were used in a recent recipe for some Old Fashioned Comfort Food.
Mixed by tablespoons since we had quite a batch to cook up, this is probably about a cup worth of spices you are seeing here.
Ron has the temperature just about ready to go.
And here are a couple of pieces of Dinnertime Contentment.
Fried Chicken.
Gluten Free for my hubster and daughter.

And apparently arriving home from work to this sight and scent was too much to of a temptation.
Someone had to finish the 'test' piece and make sure it was safe for consumption.
And yes,
We're Still Here.

Everybody Has 'Em/ Tasty Thursday

 So you have to get to the grocery store, the bank, the post office and fill up the tank in your car..... all in the same evening....and in less than 2 hours. Why? because you really want to eat supper at a decent hour.

On this Tasty Thursday we're coming to the rescue for those gluten intolerant individuals.
Enter the following products.

For your entrée, this is one of our go-to's for a very tasty hot meal in a hurry.
Udi's, you have done well with this one. I think my own mother would even eat this.
And that says a Lot!
For a little extra on the side there are Red Robin fries to go with the sauce I gave you the recipe for.
And again, gluten free.

A great find for us from a grocery store chain in Kansas City (1 1/2 hour drive one way for us) is the egg noodles by Jovial. Every bit as good as home made. My family never leaves leftovers of these.
Especially when cooked in our homemade beef broth, these would stand up to any regular glutinous brand. I'd hang my hat on that statement. (did I mention they don't have to be frozen?)


  They come in little nests and allow you to cook them in a shallow amount of liquid as we have here in this skillet. Pretty cool cookin'. (Not really, they are best served hot)
And the best part is,
I did get to bed on time.

A Bottle of White/Tasty Thursday


I couldn't resist me some Billy Joel on this New Year's Eve.
Hope you enjoy a little blast from the past.

But before we let you go,
I am sharing my inspiration for that little bottle of white
on this Tasty Thursday.

I came home to some water boiling and a bottle of wine on the counter.
 I was put to work chopping onions.....
While Rachel tempers some eggs.
Here's the Pasta Carbonara Florentine,
Gluten Free,
and
I only had to chop onions.
I didn't even cry.
Great end to 2016 I must say.
Sending out a Happy New Year wish to all my family and friends.
