A gluten-free Chicken Parmesan (but I improvised with provolone).
Notice the zucchini hidden under the crusted cheese. That was sauteed in garlic butter and olive oil. Did you know combining the two keeps from smoking up your kitchen?
Best of all is that was a home-grown zucchini.
